Tabasco is a brand of hot sauce produced by McIlhenny Company. Tabasco sauce is made from Tabasco Pepper, vinegar, and salt, and is aged for 3 years. Tabasco sauce was invented in 1868 by Edmund McIlhenny. The Tabasco Pepper is heavily grown for the Tabasco company in Central and South America. Some of the peppers are still grown on Avery Island. Following a long tradition, the peppers are hand picked and can only be picked if the color of the pepper matches the red stick that the pickers carry around to determine if it is ripe.
